Ingredients: Corn, mayonnaise, lime, parmesan cheese (i just used the kraft kind with the green lid.)
Roy Choi, a famous fusion chef from LA, who created the first gourmet food truck, wrote a book called "LA Son, My Life, My City, My Food." In the book he gives recipes from each part of his life. One section was LA Street Food.
Around LA, there are Mexican or Central American street vendors who sell corn. Sometimes they are placed in coolers that keep the corn hot, sometimes they might even make it right there. I am sure it's all totally illegal, but we love them anyway.
Here I made his recipe for corn. I did my own spin as I didn't have the mexican cheese he wanted, nor the pepper.
So I simply lathered the corn with mayonnaise, sprinkled it with copious amount of parmesan and squeezed some lime on it.
My son has lost a few of his front teeth. So we sliced the kernels off.
